Here is a really fun recipe for the holidays and so simple to make! A quick little variation on a standard Rice Krispies treat by just adding in Peppermint and a hint of white chocolate.
These are so delicious and a perfect accompaniment to hot chocolate. The candy cane pieces make these really festive and you could cut these into shapes- like stars or candy canes and they would be perfect to make for class parties.
I actually added candy canes to my food processor and pulsed for a few seconds- you want it chunky and not sure fine. You can do that or place an unwrapped candy cane in a Ziploc and hit it a few times with a rolling pin or you can purchase candy cane pieces in a bag at stores like Michael’s in the baking section.
If you decide to use real candy canes, I found they got hard and stuck together after awhile so it is best to chop the candy canes right before you use them.
Here is the recipe:
- 5½ cups Marshmallows
- 3 tbl butter
- 4 Candy Canes
- 6 cups Rice Krispies Cereal
- 1 cup white chocolate chips (I used Ghirardelli)
- Add 3 tablespoons of butter to a large pot and heat over medium-low on the stove top.
- Once the butter melts, add 5½ cups of marshmallows to the pot and stir well until they start to melt.
- Add 6 cups of Rice Krispies cereal- stirring after each cup.
- Stir well and add in 1 cup of white chocolate chips- they should melt into the mixture quickly.
- Finally add the crushed Candy cane into the pot and stir.
- Spoon into a buttered 9 x 13 dish and use a spatula to press the Rice Krispies down firmly.
- Allow to cool and slice and serve!

If you want to crush a 5th Candy Cane, it looks pretty sprinkled on the top of the Rice Krispies. You can do that before they cool or you can sprinkle the candy cane on the top after you have cut them and removed them from the pan.
I bet your children love these little treats! Oh and you can skip the white chocolate if you like. I tried this recipe several times and for some reason the White Chocolate makes the Candy Canes seem more fresh and minty so I much preferred that flavor.
