Here is a really quick and easy recipe that requires no baking and is so festive for the holidays. I made this the other night and told the kids it was Reindeer Food. Needless to say they want to become reindeers now so they can have this all the time.
It really couldn’t be easier to make this recipe:
Add 9 cups of Chex Cereal to a bowl. I find rice chex has almost no flavor so that is a good choice but Corn Chex works just as well.
Place 4 candy canes or about 15 peppermint candies into a food processor and chop until they are in small pieces.
This is roughly the texture you want- not too fine. You can also just put the candy in a Ziploc and bash it a few times for the same results.
Grab about 1/4 cup of chopped chocolate or mini chocolate chips and set aside.
Put 10oz of white chocolate chips or almond bark in the microwave in 30 second intervals, stirring in between, until melted.
The white chocolate will harden quickly so you need to have everything ready to go before you start melting. I much prefer almond bark because it doesn’t seize up like white chocolate chips can.
Pour the melted white chocolate over your Chex Cereal and gently stir to incorporate, sprinkle about 2/3 of the candy cane mixture in with your mixture and add the chocolate chips.
Mix it all together and then spread the entire batch out on a piece of wax paper or parchment paper to cool. You don’t want big chunks of Chex Mix so try to spread it out evenly to cool. I like to sprinkle the remaining candy cane mix on top.
And now you are all finished! This will be yummy (but messy) right away and once it cools it will be a little easier to eat.
I found some cute little containers that look like paint buckets at Joann’s and popped ours in there. This recipe makes about 3x what you see pictured but sadly my family (starring me) had grabby little fingers in this mixture before I had a chance to take photos.
So best to make more then you think you might need ;).

Oooh, I will have to add this to my peppermint themed dessert tray this year. My kids and I made the snickerdoodle chex mix last year. That one is really yummy too. I think I found the recipe on the cereal box.
