
Christmas was a tiny bit frantic in our house this year. We were travelling the week before Christmas and didn’t get home until late on Christmas Eve.
I didn’t have time to meal plan and shop before we left (and the fresh stuff wouldn’t have lasted anyway) so I scrambled to come up with a meal and shopping list on the flight home. My poor husband tried to hit several stores on Christmas Eve and they were all closed… so we had an empty fridge for Christmas. (Bah!)
I wound up enjoying Christmas morning with my kids and then racing off to the store and then back home to get cooking. I like a big breakfast for Christmas morning, we make the rounds to see family and then come home to a swanky dinner. So we were leisurely about opening gifts and such I really didn’t have much time to put something together for breakfast.
Luckily I spotted these darling Snowman pancakes from Simple As That blog and knew they would be perfect for Christmas morning! These are so cute- they would work perfectly all winter long and I know I will make them again for sure.
They really were so easy to make and I wanted to post them for you as well. I can promise these are really fast to make.
I just whipped up a whole wheat pancake batter (I am a cheater and use the premade mix from Costco- it is our favorite). Oh and I popped some bacon in the oven to cook before starting the pancakes.

Then I just scooped a bit of batter out to make a mini pancake circle in the pan- I did this freehand and it was maybe 3 inches wide. As that was cooking I eyeballed a second circle slightly smaller to make the head. Your circles do not need to touch and I think it is easier to make them separately but you can also spoon the batter for the second circle to touch so you have one solid snowman.
Flip your cakes and once they are done pop them onto a plate. I used chocolate chips to make the buttons for the snowman- just let the pancakes cool a tiny bit or the chocolate chips will get too gooey. Once my bacon was finished I used that to create a scarf.
Then I grabbed a tube of icing and dotted on eyes and a mouth and used it to create arms on the plate. Simple as That blog used pretzels to make her arms- so really whatever you have on hand is perfect. You could just melt a few chocolate chips and put them in a Ziploc and cut a super tiny hole at the end of the bag and use the chocolate to finish off your snowman too.
Next you can skip the nose or use a tiny slice of carrot or maybe an orange to make a nose. I was racing so I just grabbed an orange tic tac leftover from my Thanksgiving Turkey Cupcakes.
Viola! So simple and so cute and fun for winter.
Oh and I just took a spoon and drizzled some confectioner’s sugar at the bottom of the pancake to make snow.
The girls LOVED these. When I asked my 6 year old at the end of the day what she remembered most about Christmas her response was all the wonderful things Santa brought and the Snowman pancakes :). So a memory made and the children had no idea that I was a bit frazzled to pull it all together. Major score!
