Looking for some inspiration for dinner?
Here is a really comforting recipe for creamy Broccoli Cheddar soup. The recipe calls for chicken stock but I am a vegetarian so I usually substitute vegetable stock instead- either way is delicious.
I actually don’t care for broccoli but this soup I enjoy frequently so it is a great way to get some veggies into your belly and it really is very quick to put together.
Broccoli Cheese Soup Recipe

Creamy Broccoli Cheddar Soup. So comforting on a cold night.
Ingredients
- 1 tablespoon butter
- 1 white onion, chopped
- 1½ stalks celery, chopped
- 1 carrot, chopped
- 1 clove garlic, chopped
- 2½ cups broccoli, chopped
- 3½ cups chicken stock
- ¾ cups cheddar cheese, shredded
- salt and pepper as needed
Instructions
- Cook the onion, celery, and carrot together until softened, about 3 to 5 minutes. Add the garlic and cook an additional minute, or until fragrant.
- Add in the broccoli and stock, stir, and bring to a boil.
- Gently simmer the mixture for 10 to 12 minutes, or until the broccoli has softened.
- Remove the soup from the heat, then blend the soup and its ingredients carefully to a smooth texture (using immersion blender or standard blender).
- Heat the soup on the stove, add in the shredded cheddar cheese, then season as needed with salt and pepper.
- Enjoy!

Sounds super yum my! Thanks for posting. I’m on a low carb diet and it’s difficult to find creamy soups that don’t have flour in them.
