I actually just bought these little brown rice cups a few days ago at Target and wanted to share one of my favorite fast lunches.
I love these little rice bowls ($1.99 at Target) to make a super fast fiesta bowl for lunch. Just micro and add avocado, salsa, frozen corn, black beans, sour cream… a little cheese… really whatever you love. Delicious, healthy and ready in less then 2 minutes.
