One of my favorite super fast and healthy meals to make is a simple brown rice bowl. I like these O Organics ones from Safeway- just toss in some black beans, frozen corn, pico de gallo and viola! Lunch in about 30 seconds packed with fiber and protein. I am a vegetarian so you might also add leftover chicken or guacamole.
I usually top it with a little sour cream and I can actually take this guy to go.
