Weekly Menu Plan

Here is the plan for this week!

  • Chicken Bundles and Steamed Broccoli
  • Teriyaki Chicken and Brown Rice and leftover broccoli
  • Shish-kabobs on the grill with steak and peppers and onions and grilled corn on the cob
  • Greek Pita Salad
  • Green Salad and Tomato and Mozzarella Tart (from Real Simple July)
  • Crock Pot Pork Chops and Apples + leftover salad
  • Tuscan Chicken with White Beans

It is super hot here so almost all this is crock pot recipes.  I got the recipes from three cookbooks this one (the name is really offensive but I have to say there are great recipes), Everything Healthy Slow Cooker cookbook, and Don’t Panic Dinner’s in the Freezer.

I just bought chicken and steak last week and the pork chops are in the freezer from the week before.  I made the chicken bundles last week from the freezer cookbook so those just get defrosted and baked.  I am trying to do at least one freezer meal a week (with the recipe doubled or tripled) so I can have at least one meal each week that is already prepared to save some time during the week.

    I have been wanting to freeze some meals, but have been terrible about doing it on a regular basis. I tend to be all or nothing (which usually ends up being nothing vs all) so I haven’t been doing very well. But I think I’ll do what you do and start doubling one meal per week to freeze. Then maybe I can build up to doing several meals a week that are frozen once I get into the habit.

    I hear ya Sharon. I can only squeeze 2 hrs MAX in the kitchen and I like to try and do this so I can hide from the kids and watch a movie on Amazon. 🙂 Those Chicken Bundles were a huge hit- I used panko and cheese basically to make nuggets. I know that book isn’t free but I got the Kindle edition and I think it was worth the money. Most freezer books are pasta and casseroles and a lot of stuff that isn’t so great for you. This one seems better to me.

    Which book are the chicken bundles from? Also, I don’t get Real Simple anymore…..is that tomato mozz tart recipe online anywhere??? I would love to have that recipe!!!

    Amy it is from the freezer book. I’ll put the recipes up later today for you. Sprouts has organic tomatoes for 1.99 this week so that tart is perfect. I hate to say but you would probably like that first cookbook. She uses the b word a ton in it which I am not crazy about but it is a lot of organic stuff that looks delicious. I am making a few things from her this week- like banana cinnamon muffins and a potato bake for breakfast. She uses vegan cream cheese and stuff which I am not going that far but it is like organic, natural comfort food.

    My husband actually read the book she wrote for guys “skinny Bast…” and loved it, so I’m not surprised! We just got a kindle this week and I’m excited to check out some of these cookbooks!

    Here are the recipes:

    Tomato Tart: 425 oven, roll half sheet puff pastry into 9×6 rectangle, place on parchment lined baking sheet and refrisgerate until firm at least 30 min. prick all over with fork and top with 1 cup grape or cherry tomatoes halved and 1 cup grated mozzarella. Drizzle with 1 tblspn oo and season with salt and pper. bake until golden brown about 20-25 min.

    Chicken Bundles:

    1 cup bread crumbs (I used panko)
    1/2 cup grated cheddar
    1/2 cup grated parm cheese
    1 teaspoon salt
    1/4 teaspoon pepper
    6 boneless chicken breasts
    1/2 cup butter melted

    mix bread crumbs and cheese salt and pepper. dip chicken into butter then in cheese mixture. tuck sides of chicken breast under to form a bundle. to freeze, wrap in plastic wrap and place in freezer bags. thaw, place in baking dish, melt 2tbl butter and pour over bundles. sprinkle another 1/4 cp parm cheese and bake at 350 for about an hour.

    I don’t like to touch chicken so I skipped the tucking whatever part. I used chicken tenders instead and made nuggets and they worked out really well.

    Here is one other I made last week I think you will like. It is from Shape magazine:

    Blue Cheese Burgers

    1 tea olive oil
    1/2 cup finely chopped onion
    1tbl worstershire
    1 1/4 tea dijon
    1 lb ground sirloin (I used a garden burger)
    1 oz blue cheese crumbled
    2 tbl buttermilk
    1 tbl light mayo
    pinch of sugar

    add oil to skillet and cook onion, saute until tender, transfer to med bowl, season with 1 tbl dijon, salt and pepper, add sirloin and mix gently. divide into 4 patties. heat grill and grill burgers. in another bowl mash blue cheese with the back of a fork, stir in buttermilk, mayo and 1/4 tea dijon, and sugar and a little pepper.

    Dump on a bun and serve with tomatoes and red onion. I thought this was really good and it was so fast.

    Yum, yum, yum!!! Thanks so much for typing up those recipes. I will definitely be trying all 3! When I was at the grocery store today, I peeked in the Real Simple Magazine to see the picture of the tart and it looks amazing!

    The slow cooker one Donna. I think the recipe was incredibly simple too-slice apples and layer them on the bottom of the crock and top with pork chops and cook for a few hours.
