I was recently challenged by Smart and Final to come up with a Mediterrean inspired pasta dish using some new products from the La Romanella line.
La Romanella offers a variety of pastas, olive oil, pasta sauce, parmesan cheese and much more.
So as some of you may know- whenever mediterrean flavors are involved I am usually in so I decided to whip up a quick pasta dish yesterday. This has four ingredients and is very budget friendly. I also thought this was a little lighter for spring and summertime meals.
I used La Romanella Organic Penne Pasta (from Smart and Final), artichoke hearts, feta cheese and sundried tomato pesto. This meal was ready in a matter of minutes and can also dressed up with chicken or olives.
I made this as a fast lunch yesterday but serve with a green salad and dinner is ready!

I went into Smart and final yesterday for the first time, I bought a carton of 18 eggs and another dozen a snack sixe bag of cheeto’s and it cost me 3.00, I was shocked, I was in a hurry and couldn’t really shop, but you can bet I will be going back to check it all out !

When I happen to run across Ziti I go a little crazy. It is one kind of pasta the stores I frequent don’t stock. And baked Ziti in a restaurant – wow! It was so common back in NJ where I grew up but not in CA. I am amazed to find Pastina in the stores now.
