Weekly Menu Plan

Here is the menu plan for the week:

MONDAY: Sausage and Pepper Heros (using smoked sausage and red peppers and sandwich thins and provolone cheese), corn

TUESDAY:  Crock Pot Mac and Cheese with Salad (Family Circle Feb)

WEDNESDAY: Pulled Pork Sandwiches, Cucumber Salad

THURSDAY: Asiago “Tater Tots” and Italian Trattoria Burger (I modify this quite a bit but that frico adds so much to a burger)

FRIDAY:  Caprese Salad with Grilled Chicken

SATURDAY: Tacos

SUNDAY: Vegetable Stromboli (Parents Magazine Dec/Jan)

    I love how you are adventurous in the kitchen, just like me! It was funny because when I saw your menu plan from last week, all the recipes you made from the latest Rachael Ray magazine I had already dog-eared to make too!

    Oh my goodness, I saw the Ultimate showdown when he made that burger. The cheese looks so yummy. I will definately try this next time I make them. Thanks for sharing all your fun ideas.

    Amy we are making those tonight. I have leftover Honey Gold potatoes from last night so I thought I’d put those together. I made a sour cream blue cheese sauce for mine and the girls had cheddar and broccoli and they were so good!

    Asiago Tots:

    2 lg potatoes grated
    1 sm onion grated
    1/4 cup flour
    1/4 parm cheese
    1 egg yolk
    1 1/2 tbl salt
    1 tea garlic powder
    1/2 cup asiago
    2 tbl chopped rosemary

    combine potatoes, onion, flour, parm, egg yolk, salt and garlic powder.

    in deep skillet, het 1 in veg oil over med high until it registers 350 on a thermometer.

    form rounded tablespoons of the potato mixture into balls and squeeze out extra moisture

    drop and fry until golden, about 5 min and place on paper towels

    place asiago and rosemary in large bowl. toss potatoes in to coat.

    How did your bleu cheese burgers turn out?? Also, would love the asiago tator tot recipe!
