Menu Plan Monday

Alrighty here is my menu plan for the week. I still have to go to Safeway and get a few more ingredients but here goes:

MONDAY: Meatball Subs with Sweet Potato Fries

TUESDAY: Pork Teriyaki (Family Circle Magazine, Jan pg 133) and Brown Rice with sauteed veg

WEDNESDAY: Salad with white bean and red pepper crostinis (All You Jan pg 45)- my husband will probably have steak too

THURSDAY: ย Hoe Down BBQ Chuck Roast with Roasted Honey Potatoes and carrots

FRIDAY: Crispy Parmesan Chicken (Cooking Light July, pg 168) and Garlic Parmesan Green Beans

SATURDAY: Italian Pasta with Smoked Sausage and Salad

SUNDAY: Enchiladas

    Yum! Looks good. I got several cookbooks for Christmas, but I’m pretty bad about planning and actually cooking from recipes. I like looking at them and dreaming about cooking from them. I now have both of the Jessica Seinfeld cookbooks and I made some purees over the holidays, so last night I was feeling inspired, I made her meatloaf. I changed the ingredients a little to go with what I had on hand, but I did use the carrot puree and I made 2 loafs and put one uncooked in the freezer. DH was SURE it was not going to be good, told me not to bother putting much on his plate… But it was SOOO good! We ate it all. I can’t wait to cook the other one. I also made mashed potatoes with cauliflower puree, but DH said he didn’t like them, he said he can taste the “broccoli.” I also made up some of her hamburger patties with carrot purree… I’m not going to spend much time in the kitchen tonight:-)

    Stephanie I like her recipes! I have found that my husband tastes the cauliflower puree when I have cooked it the same day because the smell is so strong ๐Ÿ™‚ Otherwise he has no idea. Her deviled eggs I really like too for parties and the pumpkin oatmeal is great too. Just simple stuff and you add the extra veg and can feel better about making meatloaf or whatever ๐Ÿ˜‰

    I’ll have to try more of them. Now that I have a bunch of purees made up in the freezer it doesn’t seem so daunting. ๐Ÿ™‚ Anyway, your meal plan Monday is great, makes me want to do a meal plan.
