A few people asked for easy, kid friendly recipes on the menu plan this week and if you are not familiar with Jessica Seinfeld, I am a fan of her cookbooks.
She has two books that have very basic foods like tacos, chocolate chip cookies, deviled eggs etc.. and she shows you how to sneak a few veggies in to make them a little healthier.
I use her ideas all the time- my favorite is to sneak a little pureed butternut squash or pureed carrots into box Mac and Cheese. ย I also like pureeing a little cauliflower and sneaking it into mashed potatoes.

Yay! Love these! I actually bought the first book in maybe like November at Kohl’s it was a Kohl’s cares book (which are all $5) and it was on clearance 50% off and I was using a 30% off coupon… So I paid under $2 for it. I really like it so I sprung for the newer one on Amazon as a Christmas present to myself. And after looking through them then looking through my Rachel Ray cookbook I decided that Rachel Ray uses too many ingredients that I don’t normally have around. I’m sticking to my Jessica Seinfeld cookbooks!
Stephanie that was a great deal! I agree- she is so much more realistic with the stuff she makes. It isn’t my kids that are problem eaters it is my husband ๐ So her stuff seems to work for sneaking veg to him.
Yeah, after I went home and looked through it I was thinking, I should’ve bought them all! What a deal! But oh well, next time… It would have made great gifts for friends and stuff though…
I have the same problem! It’s DH that is picky, not our 2.5 year old…
What is it with husbands and veggies? Mine only eats them if the kids are watching, so he can be a good example. I am buying this book!
Ok well my other tip is to puree one day like she says and let that be a time when he is busy or gone. My husband can only taste cauliflower if I have just steamed it and the house smells ๐

We bought it for $5 at Kohls and the very few things I’ve made so far my son didn’t like. The scrambled eggs ‘tasted like salad.’ (he’s never eaten salad!) I think that everything needs to be modified if it’s going to work in our house.
I cook and puree the cauliflower ahead of time as well, and then I freeze it in freezer bags. My family will complain that they can taste it if they smell cauliflower cooking, but they never complain this way. My husband is as bad as my kids!
I got this in November on clearance at Borders and paid about the same price. I finally got around to trying a recipe from it this weekend. I made the peanut butter banana muffins. They were a big hit with my five year old. You’d never know there was cauliflower in them!
