Mission Tortillas challenged me to create a quick and easy meal for less than $10. In our family, we use tortillas almost more than we use bread. I consider tortillas to be the easiest way to pull together a very quick meal.
One thing I make frequently are egg burritos. These are a great way to get a fast and very filling breakfast (and you can take them to go!) Even better- it is a great way to use up any leftovers you might have from the night before.
One of my favorite recipes is for a Greek Breakfast Burrito. You can add any ingredients that you might have on hand- but this is the breakdown of what I used:
**Eggs (one dozen) $1.29
**Sun Dried Tomatoes in oil $2.50 (this is significantly less expensive when purchased in bulk jars from discount clubs)
**Feta Cheese $1.50 per package on sale
**Mission Tortillas $1.50 per package on sale
I start by scrambling the eggs- when they are about halfway cooked I add the chopped up sun dried tomatoes. You can also season with salt and pepper.
Once they are cooked, I serve on a Mission tortilla and top with feta cheese.
This can be ready in just minutes and then wrapped like a burrito in foil and taken to go!
Some other ideas to use up those leftover dinner items:
:: Roasted Chicken, Spinach and Cream Cheese
:: Spanish Rice, salsa and eggs
:: Roasted potatoes, Eggs and cheese
And you can toss in a variety of veggies depending on what you have on hand.
