Menu Plan Monday (Party Edition)

This week I thought I’d just post the menu for our 4th of July party.  We have a lot of leftovers so I will probably just pull some things together this week to use everything up.

Here is what I served- and here was my shopping trip.  We had 10 people over and I used some things from the pantry/freezer and spent $61 on the rest.  I try to stay as close to my budget as I can when I entertain- without looking like a total cheapskate.

Bocconcini and Cherry Tomato (I used herb sea salt on top and I skipped the basil)

Pizza Dip with Sliced French Bread (Oh my was this good!  I will put the recipe in the comments)

Sliced watermelon, grapes and cherries

Chips and Wholly Queso

Watermelon Margaritas (I will definitely make these again!)

Mango Lemonade for the kiddos

Steak and Chicken skewers (my husband made a marinade of BBQ Sauce and A-1 Sauce) with grilled peppers, mushrooms, beefsteak tomatoes

Grilled Corn on the Cob with butter and grated parmesan cheese

Frozen Key Lime Pie

Peanut Butter Cupcakes

Here is the recipe for the pizza dip- I think you could easily play with this and it would be wonderful with all sorts of different things. This recipe is courtesy of Family Circle magazine Dec 09.

8oz Cream Cheese softened
3/4 light mayo
1 cup shredded mozzarella
8oz chopped pepperoni (I skipped this)
2 ripe red plum tomatoes, chopped
10 large pitted black olives chopped

Mix everything up and put in a baking dish. Bake at 350 for 30 min or until golden brown on top.

Serve with sliced crusty bread.

Great recipe now I want to know about the margaritas did you make them using fresh watermelon? If so can I have the recipe? Thank you!

Silvia- I included the link to the recipe in the post- just click on it to see. We made it exactly like he did except I didn’t bother with the garnish. They were great and my girls loved the virgin margaritas.

I have never been able to successfully grill sweet corn. It just doesn’t seem to cook enough without getting tough or too raw. Can someone help me out by posting step by step directions that are no-fail? Thanks all!

The pizza recipe sounds good. Is that 3/4 C. of light mayo?

Jaime I used full fat mayo the first time and I have since made it again (oink, oink!) with artichokes and sun dried tomatoes. I used artichoke spinach cream cheese and light olive oil mayo. YUMMY! I think the fresh tomatoes are nice though.
