Menu Plan Monday

Here the menu plan for the week.

MONDAY: We had appliances delivered today-(4 hours late)- and I couldn’t use the kitchen most of the night so I would up getting unexpected take out.

TUESDAY:  Chicken and Squash and Brown Rice Casserole

WEDNESDAY: Goat Cheese Empanadas and salad

THURSDAY: Broccoli Cheddar Soup

FRIDAY: Summertime Chicken and Orzo Pasta

SATURDAY:  BBQ Chicken Baked Potatoes

SUNDAY: Roasted Pork Shoulder and Creamed Corn

The Chicken and Squash and Brown Rice Casserole sounds so tasty! Can you send me the recipe, or post it?! I’m looking for something new to make this week.

yeah I agree with Jenny and I was hoping to know how you make the goat cheese empanadas too? that sounds delicious!

Here is the empanadas- I posted it on FB last night:

that was super easy from Real Simple. Use cookie cutter to cut rolled pie crust- divide 4oz goat cheese amongst 16 circl…es. Dot edges of dough with water, fold in half and press with a fork to seal. bake at 375 20-25 min. Says to serve with a corn salsa.

I used brown rice instead and I don’t have any Rosemary so I’ll skip that.

Hey did you make the summertime orzo chicken recipe? ever since i saw it on mnday i have been obsessed with trying it and i havent had a chance to make it. wanted to know if it was delicious

Kristal- No I have not. I am going to do that one tomorrow. I have never had an orzo pasta turn out badly so I have high hopes :)
