Menu Plan Monday

Here is the plan for this week.  I bought monster jugs of Sun Dried Tomatoes and Artichokes and Feta at Costco so I have had a common theme the last few weeks.  Oh how I love them though…

MONDAY: Carrot Orzo Pasta  (from Southern Living at Home magazine)

TUESDAY: BLT Salad

WEDNESDAY: Greek Omelet and Roasted Red Potatoes

THURSDAY: Lemon Risotto with grilled asparagus

FRIDAY: Baked Potato and BBQ chicken

SATURDAY: Chicken and Dumplings (to finally use up the last of my free Pillsbury Biscuits!)

SUNDAY: Tomato Mozzarella and Basil Sandwiches

So that is our plan- what’s on your menu this week?

Hey Charlene,
I LOVE YOUR SITE!!!!!!!!!!!!

Anyway, have 4 of the day’s planned. Lol

Monday: Leftover grilled hamburgers and mac salad
Tuesday: Giant beans baked w/ carrots,celery and tomatoes w/ herbs and pillsbury bread sticks
Wednesday: Baked tilapa w/ parmesan bread crust and home made pica de gallo w/ homemade cheddar/asiago biscuits and sauteed spinach w/ olive oil
Thursday: Crockpot black eyed beans w/ spinach and mustard greens and herbs, paired with cheddar/asiago biscuits (left over from nite before)

Still working on our menu for the week…but it will involve the cheap chicken & shrimp I got at Safeway today!
Oh, and that Lemon Risotto recipe is awesome!! I’ve made it a few times… :) Enjoy!

texas chili from the $5 dollar cookbook, not sure the rest of the week. :) maybe….spaghetti? or something with chicken. :)

Grilled salmon w/ spinach salad and faux fried rice (basically steamed rice added to diced sauteed carrots and peas, stir fried with a touch of soy sauce)
Grilled eggplant and tomato paninis on homemade sourdough bread
Chicken Saté with ponzu(citrus) sauce and strawberry spinach salad

and I work the other two evenings, which means my husband will probably make macaroni and cheese or frozen pizza unless I prep something quick ahead of time.

What’s your recipe for the chicken and dumplings with the biscuts? I’m looking for ways to use them up!

Carla I don’t really have a recipe. My plan is to just head over to Pillsbury and get ideas from them :)

I always want to plan out our weekly dinners but i never do, and if by some chance i do, i fail to stick to it. I would love some tips on when you do your planning and how you make sure to stick to it. I love your blog by the way, i just found it, my lucky day! :)
