
Yuck we have awful rain after weeks of gorgeous sunshine so I am in the mood for soups this week!ย This menu is a little more to my taste (vegetarian!) but not to worry there is a lot of meat in the freezer and my husband can add whatever he likes to what I make- so no protein shortages here.
MONDAY: Baked Chicken and strawberry/mango salad with lime juice
TUESDAY: Broccoli & Potato Soup (this recipe is from Family Circle magazine and it is not available online. Sadly I can’t post the recipe but it is one potato, lots of broccoli, vegetable broth, onion and Monterey Jack cheese all pureed together. Really good!)
WEDNESDAY: Greek Orzo Pasta- This is my favorite thing ever and is delicious served hot or cold. This recipe is similar to mine but I use dill rather than parsley or oregano. I also use sundried tomatoes rather than fresh and calamata olives. I think leftovers could be made into a frittata too.
THURSDAY: Spinach and Strawberry Salad with French Bread
FRIDAY: Carrot Soup with Rosemary Dinner Rolls
SATURDAY: Spanish Tortilla (I don’t use sausage) with Salad (I had this in Barcelona years ago and it is the most simple and delicious thing ever.)
SUNDAY: Hamburgers with homemade sweet potato fries
So what’s on your menu this week?
Question concerning the Family Circle recipe… couldn’t you just alter one ingredient so that there isn’t a copyright issue and then you can post the recipe? Like change vegetable broth to chicken broth?
Do you have any tips on the sweet potato fries? I love to make those, too, but I have a really hard time slicing them all up.
This will be my first time making them- my husband does these amazing homemade fries and I think this will work with his technique. Usually I try to bake and they turn out a hot mess. We have this gadget that came with a fryer we got as a wedding gift it cuts them super easy in uniform sizes:

Then my husband just heats up canola oil in a pan on the stove and fries them. They turn out so perfectly.
