Menu Plan Monday

menu plan monday

We got off track last week with two sick babies but this week everyone is feeling great and we are back into our routine.

Here is the plan for the week:

MONDAY:  Chicken Enchiladas

TUESDAY: Alice Springs Chicken and Salad (I call this fat boy chicken- it is basically chicken, cheese and bacon like they make at Outback Steakhouse)

WEDNESDAY: Broccoli Potato Soup (this is my homage to St Patrick’s Day)

THURSDAY: Pumpkin Penne Pasta

FRIDAY: Roasted Chicken with apple and blue cheese salad

SATURDAY: Green Salad with Goat Cheese Focaccia Bread

SUNDAY: Orzo Pasta with fresh dill, lemon, olives, tomato, feta cheese

Anyone else have something delicious planned this week?

Yum “Alice springs chicken”, sounds good. The only meal I have planned so far is Meatball stroganoff. I guess I’m winging it this week.

Hi Charlene, first of thank you so much for posting your menu plan Monday I always find great inspiration from it. I am a no beef no pork vegetarian I only eat chicken, tukey and fish. So, thank you I find your ideas so refreshing and easy to use in my daily life. I was wondering are you a full vegetarian or do you eat chicken and fish?

Alice springs chicken does sound good, we make a similar version of a chili’s chicken.

Hey Dallas- No I don’t eat any of it. I do eat tons of cheese and eggs though. I am not making any sort of political statement- I just can’t stand the texture of meat in general. Especially chicken and fish! We raised chickens as a kid too so I think chicken would be my last choice ;) I will see you in about 2 weeks!

Balsamic Chicken and stuffed tomatoes, Meat crust pizza, stuffed pork chops..that’s just a few. Hubs and I are doing south beach and this is the first 2 weeks-UGH!
