Here is the plan for the week. I barely shopped this week because we have a ton of stuff that needs to be eaten.  My menu is slightly odd this week as I working out ways to use up various items in the fridge and pantry.

MONDAY:  Orzo Pasta with red peppers, feta, olives and dill (I can eat bowls and bowls of it and it is on my menu almost every week once the weather gets warmer!)

TUESDAY:  Homemade pizza with butternut squash and pine nuts (I think this recipe was from Real Simple magazine)

WEDNESDAY:  Black bean, corn and cheese quesadillas

THURSDAY:  Roasted chicken and cucumber salad

FRIDAY:  Lasagna with salad

SATURDAY: Creamy Brown Rice and Chicken casserole

SUNDAY:  BBQ Quesadillas (I am going to try this with chicken instead)  Thanks Taylor!

It is a kitchen sink thing. I just mix olive oil and vinegar with a sqeeze or two of lemon juice. Then tons of fresh chopped dill and whatever I have. I usually go Greek so tomatoes, olives, cucumber, feta etc..

I sneak pickles in mine too but I don’t like to tell people because it sounds disgusting. Just chop them up and it adds extra tang.
