Here is the plan for this week. Quick and easy is pretty much the name of the game around here!
MONDAY: Chef Salad with Wheat Bread
TUESDAY: Steak with mushrooms and green salad
WEDNESDAY: BBQ Chicken with steamed veggies
THURSDAY: Greek Pasta (orzo, sun dried tomatoes, olives, feta cheese etc..)
FRIDAY: Red Pepper and Tomato Soup with french bread
SATURDAY: White Bean mix and rice (this is a white bean mix that typically goes on Crostini but I make a meal by mixing it with rice.)
SUNDAY:Taco Salad

We tried the “knock off” Bourbon chicken recipe w/pork (there is a link to it in my Menu Plan from last week) and it was soo good and easy. Everything you need to make it is already in the fridge and pantry!
I put a 2-3 lb pork loin in my crockpot with 1 jar salsa (store brand, mild) and 3 Tbs. of cocoa powder and let it cook on low all day. After work, I shred it and it’s fabulous over rice, as taco meat, rolled up in a soft tortilla, on nachos….I usually get several meals out of it and have a little left to freeze. So easy and so good!
Last week I made stuffed manicotti for dinner but my husband is a meat guy so I made half with the regular cheese recipe I have,and made his with ground italian sausage added to the mixture . He loved it . Just an idea , you could usually find a manicotti recipe in any cook book.
Denise I do the same thing. I just list it by day but I don’t follow that schedule all the time. I usually see what I have time to do or what I feel like and go from there. It is nice to have the meals planned out and I list them by day just to make it organized.
We usually plan out our meals in advance for several reasons. 1. many of our activities are very near dinner so I don’t want to worry about that. 2. it helps with the shopping so I don’t try to figure out things as I go. However, our planning is slightly different than yours. I don’t do it by day. I write down the meals for the week and place it on the fridge. Then as the days go by, I look to see what I want in the morning and make it. Then I just scratch off that meal and move onto the next day. It allows us to feel like we have choices and still keep the costs down. Last night I found a great recipe for slow cooker roast. It takes minimal ingredients. I put in the roast last night and have been smelling it all day. I added the veggies and potatoes this morning. Now all I have to do is have hubby pick up some french bread and we’re ready for din din. Yummy!

This lasts us for a long time (we freeze some too) and it tastes great! I think you could easily make this meatless too!

We’ve been trying to lighten our meat consumption but still enjoy its flavor in dishes. Bacon is great for that. Tonight, it was gemelli pasta (or whatever other pasta you’d like) tossed with asparagus and real chopped bacon and small cubes of mozzarella. You fry the bacon (just two pieces goes a long way if you chop it up), use some of the grease to stir fry the asparagus and then cut up small cubes of mozzarella and toss all of it together. S&P as desired. I like to put red pepper flakes on mine as well, but that’s just me. Eat when the cheese has had a chance to melt…soooo good. Everything that’s really good (bacon/cheese) but in small quantities.
