Here is the plan for this week! I didn’t have time to do my Sunday prep today so the week is full of simple and easy ideas.
MONDAY: Bread Salad (I skip the tuna), Leftover Carrot Soup
TUESDAY: Meatball Sandwiches, steamed broccoli (I will have a panini with cheese and olive spread instead of meatballs)
WEDNESDAY: Herb baked eggs with toast and green salad
THURSDAY: Eggplant Gratin with Salad
FRIDAY: Chicken Caesar Salad
SATURDAY: Chicken Cordon Bleu with peas
SUNDAY: Chicken Sandwiches with Caprese salad

I really love the collection of recipes you’ll be using this week. They are easy but make the most of the ingredients and aren’t “usual fare”. What a creative menu.
The Eggplant Gratin looks great. Eggplants have been really cheap lately but it seems good and cheap recipes are hard to come by.
