
Here is this week’s menu plan. I also spent about 4 hours in the kitchen today getting ready for the week and prepping ahead. Be sure to click read more at the bottom of the post for details on what I did!
MONDAY: Carrot Soup with Stuffed Bread Sticks (I make a vegetarian version)
TUESDAY: Spinach Casserole with Cucumber Salad
WEDNESDAY: Pizza (this awesome deal is almost over!)
THURSDAY: French Dips with steamed broccoli and baked potatoes
FRIDAY: Bolognese Pasta with Salad
SATURDAY: Italian Paninis with cucumber salad
SUNDAY: Rustic Artichoke and Ricotta Pie (from All You Jan issue) and salad
And I made S’more bars from Family Circle magazine (Sept issue)- YUM!
I spent awhile in the kitchen getting things ready today. I made the S’more bars, the carrot soup, the dough for the breadsticks and the artichoke pie, the casserole and made a big batch of breakfast burritos.
I just scramble a pan of eggs and add whatever I want to tortillas to make burritos and then I wrap them tightly in saran wrap and put them in a freezer bag. I can microwave them on week days for a super fast breakfast. This week I used red peppers, eggs, a little cheddar cheese and cream cheese on the tortillas but it just depends on what I have on hand!
Also, my little trick to making my cooking days fun. Remember the free credit to Amazon I told you about HERE for Video on Demand? Well I have used it to rent movies on my lap top and I play them while I am cooking. Last week I watched Julie and Julia and this week All About Steve. It is just a small way that I can actually relax a little and have some time to myself. Obviously I pause the movie a lot when I have my hands full- but it is perfect when mixing, chopping and even doing the dishes!
I love your idea for breakfast burritos. Do you freeze them or put them in the refrigerator (in the tightly wrapped saran wrap)? How long do they last? For example, if you made them on Sunday, would they be okay to microwave and eat on M,T, W,T and F? Thanks for any advice!
I suppose the fridge would work but I am paranoid about gummy eggs. I freeze them and I usually only make a week’s worth at a time. Otherwise I find the eggs get a little freezer burned and don’t taste as good. So easy though as long as you heat them all the way through. And make sure to let the eggs cool before you put them in the tortillas.
