
Ok I rarely share recipes because I am not going to pretend to be a great cook. But if you need a last minute idea for a quick appetizer recipe that is hearty and cheap- one of my favorites is THIS Spinach Parmesan Balls recipe from Food Network. I am usually too busy to bother with the entire recipe so I omit the onion (and these will turn out yummy if you skip the Thyme and Garlic too).
These are seriously good right out of the oven or at room temperature and will last 2 days or so. Make extra because you will be amazed at how quickly these are snatched up!

I have made these for the last 5 years. My husband doesn’t like spinach, and will literally eat them all by himself w/in 8 hours. I have to hide them from him. All of my kids eat them too, from the 2 yr old to the 11 yr old. I’m sure my 7 month old will be happy to try them. I do use dill dip as a dip. That’s my favorite way to eat them. My husband doesn’t like the dip, just pops them like chips. Can’t go wrong w/ this recipe. Merry Christmas!!!
Yeah! Dill I will try- I eat them like potato chips too! So yummy they are literally a meal for me 🙂
