In case you guys are under the impression that I am super organized and on the ball- let me tell you it is quite the opposite! There never seems to be enough hours in the day for me so this week I thought I’d try to get most of the meal prep together on Sunday night to see if it made week nights a little easier. Here’s the plan:

MONDAY: Turkey Meatball and Provolone Subs with steamed broccoli
(I am a total Jessica Seinfeld follower and use whatever veggies I have on hand to puree and mix with turkey to make the meatballs)
.
TUESDAY: Carrot Soup w/ french bread and salad
.
WEDNESDAY: Barbeque Chicken Breast w/ Baked Potatoes
.
THURSDAY: Black bean and pepperjack quesadillas
.
FRIDAY: Roasted Herb Lemon Chicken w/ brown rice (I am going to play with this recipe and use chicken breast instead of whole chicken.)
.
SATURDAY: Ashley’s Potato Soup
.
SUNDAY: Tacos (my husband’s specialty)
.
And we have a ton of mango to eat all week thanks to a .33 sale so I will serve that with whipped cream- so yummy!
