Here is the plan for the week- most of these are based on the great deals at Safeway right now:
MONDAY: Taco Salad (using the super cheap tortilla strips and salad mix from Sfwy)
TUESDAY: Italian Bread Pizza (I hollow out french bread and spread a little ricotta and top with pizza sauce, mozzarella cheese, peppers and sausage)
WEDNESDAY: Chile Cheese Quesadillas (these are open faced with a little red pepper, black beans and mexican cheese melted on top)
THURSDAY: Some version of ratatouille with the great eggplant on sale for $1 this week and mushrooms and tomatoes for $1 at Sfwy
FRIDAY: Chicken a la Orange with spinach salad
SATURDAY: BLT Salad
SUNDAY: Mexican Chicken with black beans and grilled corn on the cob
