So we are most of the way done with our move and unpacking and I am so excited to be settled!
Here is the menu plan for this week:
MONDAY: Green Salad w/ dried cherries, almonds & blue cheese & balsamic vinaigrette served w/ toasted asiago bread. I also marinade chicken in Berry Bountifuls salad dressing and chop it in the salad.
TUESDAY: Feta Stuffed Chicken w/ green salad w/ feta and olives (I marinade this chicken in red pepper salad dressing).
WEDNESDAY: Chicken Enchiladas
THURSDAY: Homemade Pizza w/ ham and pineapple (using free pineapple from Safeway!)
FRIDAY: Sauteed Mushroom Burgers and Sweet Potato Fries
SATURDAY: Veggie Frittata w/ mushrooms and cheese
SUNDAY: Cheddar Chicken Spaghetti (we have mountains of spaghetti!)

its so funny when I come across meals/recipes for things that either I have made or my mom used to make that were never called anything and we didn't use a recipe to make it–Cheddar Chicken Spaghetti is one of those things! LOL

You eat a lot of chicken like we do. I'll bet I could share 365 ways to make chicken LOL. We love it in the crockpot. I also marinate it in lots of salad dressings.
