Just when things were getting back to normal post baby, we decided to mix it up a bit and now we are moving. Oye! So I am keeping things easy again this week and we are trying to eat from the pantry. Here’s the plan:
MONDAY: Dried Cherry and Blue Cheese Green Salad
TUESDAY: Roasted Rosemary Red Potatoes and Roasted Chicken Breast
WEDNESDAY: Red Pepper and Tomato Soup w/ Homemade Italian Breadsticks
THURSDAY: Kate’s Yummy Mexican Pizzas
FRIDAY: Whole Wheat Penne with Mushroom Marinara
SATURDAY: Black Bean quesadillas
SUNDAY: BBQ Chicken and Sweet Potato fries
And I want to make Kate’s yummy Banana Oatmeal Chocolate Chip cookies…

A lot of people seem to be making black bean quesadillas this week! I'm even making black bean burritos (not quite quesadillas, but in a similar vein).
