Bargain Meal of the Week 4/22-28

For my Bargain Meal this week I thought I’d focus on the great Lean Ground Beef sale this weekend for kicked up burgers! Here is my $5 dinner for 4 people- ENJOY!

BBQ Beef Burgers $1.69/lb = $1.69

Hamburger Buns (I hope you stocked up when they were $1/6 a few weeks ago) $.66

Serve with grilled artichokes which are on sale 10/$10 = $2.00

TOTAL $4.35

OR if you live in a HOT weather area like I do, try this delicious salad instead

Strawberry-Mango Salad

Fresh Express Salad Mix 10/$10= $1.00

Mangos 10/$10= $1.00

4 lbs Strawberries $4.28- use 1/2 lb = .53

Onion $1/lb= .50

Dried Cranberry .50 oz (Safeway bulk bins) = $1.50

TOTAL: $4.53

Safeway Deals 4/22-28

The Living Well promotion continues through 5/5 and I will cover those items separately. Here are the deals from this week’s ad. Check out my bargain meal of the week post on $5 Dinners using this week’s sale items. Note some prices will vary regionally and I live in the land of no doubles!

NEW: Catalina promo on Pillsbury items. There is a catalina deal running right now- get $3 when you buy 3 Pillsbury items (the rolls etc.. in the tubes). The tiny 4 ct crescent rolls are working for the promo but are not marked in stores. They are priced at $1.29. Some areas received Pillsbury coupons in the 4/5 SS- my coupon was for .40/2 but I found a discarded blinkie in front of the display area for .75/3.
So the math looks like this (3) x $1.29= $3.84- plus whatever coupons you have, get a $3 catalina off your next purchase. In my case I paid .09 for all three- but the final cost will depend on your coupons. (Since I have an extra 10% off on my Safeway card they actually paid me to buy them). Reader Karen asked if I have any suggestions for using up apples that are starting to go bad. I thought I’d share a few ways that we use apples in our house.

When I notice they are starting to get a tiny bit mushy, I peel and chop them. I then put them in sandwich bags (quickly before they turn brown). I love this recipe from Ina Garten for apple crisps- so I typically make a batch of the crumble topping and freeze it in sandwich bags.

Then I defrost the apples and drizzle with orange juice. On warm days it only takes a few minutes to defrost and this is a delicious snack on its own! When the apples are still cold and crunchy- my daughter LOVES them as a snack. She ate half of the bowl pictured below this afternoon.

Then I put the apples in a ramekin-I modify the recipe above according the what I have on hand. If I have pears, cranberries, blueberries, raisins etc… they are delicious with this. I also mix in a bit of flour and sugar and add with the crumble topping. This just gets better the longer you cook it but I have found about 30-50min is good.

So this is the end product- it is super fast and you can put the apples in totally frozen if you don’t have a toddler that wants a snack. I usually eat this plain but you can jazz it up even more with a little whipped cream, ice cream or caramel sauce. Yum!

Campbell’s Coupon Reset

According to Money Saving Mom, the Campbell’s soup coupon for $1/2 has been reset. You should be able to print (2) again by clicking here. I was able to get 4 cans of cream of mushroom soup a few weeks ago for $.16 each with these coupons.

This has the normal exclusions- no dairy, liquor, prescriptions, stamps, and gift cards- but this is a GREAT way to make your rebate items even more profitable!

Finances: Our college savings plan

If you caught my post last month about our financial infrastructure, you know we have the bulk of our money in savings accounts at ING Direct. We love ING because it is so simple to use and offers interest rates that are a lot higher than a typical bank. Right now our ING savings accounts are at 1.5% as opposed to our Chase savings account that is at 0%! This time last year ING offered 4.5% interest on our savings account- which amounted to several hundred dollars a month. Your money is FDIC secured and you can set everything up and manage it online. No waiting in line at banks! Our accounts are linked to our checking account and we can transfer funds back and forth quickly.

We have three accounts with ING-
  1. Savings Account for Adriana
  2. Property Taxes- we deposit money monthly and withdrawal when payments are due
  3. Misc Account- this is currently serving as a home improvement fund. Before we had children it was our vacation account :)

As part of my monthly goals for April, we wanted to look into switching our daughter’s savings account to a 529 account. I am happy to say that ING provides that service! To find out more about the Education savings plan- click here and for regular savings accounts click here.

We are not contributing to our college accounts as we are still working on the debt snowball but we will be opening (2) 529 accounts at ING to deposit any monetary gifts our children get throughout the year.

If you are happy with the service, you will receive $25 for every referral you generate to family and friends (up to $500 a year). This is a great bonus for something we would have done anyway.

Do you get Family Circle magazine? I am slowly working my way through the May issue and found a postcard glued inside for $5/25 at True Value. This coupon doesn’t expire until August 2009 and is accepted at most Home Depot and Lowe’s stores (you might call to confirm first).
