MONDAY: Homemade Macaroni and Cheese w/ salad (recipe in comments section)
TUESDAY: Tacos- vegetarian meat for me and meat lovers for hubby
WEDNESDAY: Strawberry and Mango Salad w/ Homemade Bread (DH can have chicken too)
THURSDAY: BBQ Burgers w/ Grilled Artichokes
FRIDAY: Calzones- homemade dough- I use cheese and veggie sausage, DH gets cheese and ground beef
SATURDAY: Organic Red Pepper Soup for me and Chicken & Rice for husband w/ cheesy crescent rolls (I shred cheese and bake it inside the crescent rolls. I usually make a dessert version w/ nutella spread inside for pain au chocolate)
SUNDAY: Sun Dried Tomato Alfredo spaghetti (w/ chicken for DH)
I would LOVE any yummy baked goods recipe suggestions too. I am too lazy to sort through my cookbooks for ideas these days ๐

Hi Kathy,
The mac and chz is so simple and it is yummy every time:
12oz elbow mac
3c shredded cheddar
3 lg eggs
1/2 cup sr crm
1 cup milk
4 T unsalted butter cut into small pieces
Boil the pasta, drain and toss w/ 2 cups of cheese until melted. In a bowlbeat the eggs w/ sr crm, add milk and butter and a little salt.
Mix everything together and pour into a casserole dish- cover with the remaining cup of cheese and bake for 35 min at 350. Let stand 15 min.
I sneak pureed cauliflower in Jessica Seinfeld style (or butternut squash is delicious too. Or you can slice tomatoes and place them on top. Then the dish is healthy ๐
