Did you catch my post here about entertaining on a budget last week? Since we did some extra stockpiling in prepartion for the guests, this week I am trying to stay well under my $35/week budget and we will be eating a lot out of the pantry!
Monday: Tacos- my husband uses Ground Beef and I use Boca burgers
Tuesday: Parmesan Crusted Chicken and Baked Potato (I don’t bother with the dipping sauce)
Wednesday: Chicken Enchilladas for hubby and black bean and cheese quesadilla for me
Thursday: Sloppy Joes and green salad. I use ground beef for my husband and veggie meat for myself). Come back for Try Me Thursday and I will report back on the new Bargain Meals from Family Circle magazine.
Friday: Grilled burgers and corn on the cob (I roll the corn in a little parmesan cheese)
Saturday: Crock Pot Chicken- Boneless chicken breast in crock pot topped with free Bertolli Mushroom Marinara Sauce. I serve this on pasta. The vegetarian version is meatless pasta with steamed spinach or broccoli.
Sunday: Chicken and Rice Soup with toasted bread, Veggie version: Red Pepper and Tomato Soup with grilled cheese.

I like the idea of rolling the corn in Parmesan cheese. Do you do this before grilling the corn – or after?

Oh it is so yummy. I sprinkle parm cheese on a plate and roll the corn after buttering and cooking. If you actually grill your corn with foil I think you can probably put the cheese on before. Let me know if you like it!
