This week I am cooking a lot from my favorite cookbook, Deceptively Delicious by Jessica Seinfeld. You can check it out at the library or buy it used from my Amazon toolbar on the right. It is full of simple recipes that sneak extra veggies into just about everything and they are all so yummy!
Monday:
Regular: Homemade BBQ Chicken Pizza (recipe here From Frugal is Fabulous)
Vegetarian: Homemade Vegetable and Cheese Pizza
Toddler: Vegetable and Chicken with very light sauce
Tuesday:
Regular/Vegetarian: Three Cheese Ravioli, Green Salad
Toddler: Light sauce and no salad dressing
Wednesday:
Regular: Tacos from Deceptively Delicious with hidden tomato
Vegetarian: Same using chopped up Boca burgers
Toddler: Quesadilla from Deceptively Delicious cookbook (uses pureed beans)
Thursday:
Regular: Swiss Chicken Casserole (repeat from last week since I have leftover soup and stuffing) was a big hit with my husband.
Vegetarian: Green salad with Texas Toast
Toddler: Chicken and steamed broccoli
Friday:
Regular: Steak with sauteed mushrooms and steamed veggies
Toddler: Same
Vegetarian: Boca Burger with mushrooms, mozzarella cheese and steamed veggies
Saturday:
Regular: Pulled Cuban Chicken Wraps from Robin Miller here
Vegetarian: Cheese and vegetable wrap
Toddler: Broccoli Chicken Nuggets from Deceptively Delicious
Sunday: Leftovers
Desserts:
Hot Fudge Sundaes with Nigella’s yummy chocolate/pb sauce
Apricot Oat bars- recipe here (you can find boxes of dried apricots at Walgreens for $1.00)
